Should You Chill Red Wine?

A Guide to the Reds That Taste Better Cool

For generations, the shorthand for serving wine was simple: white wine cold, red wine at room temperature.

It turns out that neither rule is particularly good.

Many white wines are served colder than they need to be, muting their aromas and flavors. And many red wines are served far too warm. The idea of serving red wine at “room temperature” dates to a time when rooms were considerably cooler than our centrally heated and air-conditioned homes.

For a growing category of reds, the answer isn't merely to avoid serving them warm. It's to deliberately chill them.

Light, bright and fruit-driven red wines can become remarkably refreshing with a little time in the refrigerator. Acidity seems more vivid. Fruit feels fresher. The wine can become energetic, juicy and exceptionally easy to drink.

The trick is knowing which reds to chill—and just how cold they should get.

Why Chill Red Wine?

Temperature changes the way we perceive wine.

Serve a red wine too warm and alcohol can become more prominent while acidity and freshness recede. Bring the temperature down and the balance shifts: freshness becomes more apparent and a light-bodied wine can feel brighter and more precise.

That makes chilling particularly effective for wines built around fruit and acidity rather than tannin and oak.

There is a limit, however. Cold temperatures can suppress aroma and make tannins seem harder and more astringent. That's why a juicy young Gamay may be delightful at 55°F while a powerful, tannic Cabernet Sauvignon probably won't be.

Think cool rather than cold.

For most chillable reds, a useful target is approximately 50–60°F (10–16°C), with around 54–56°F (12–13°C) an excellent starting point for particularly light, fresh styles.

Carbonic Maceration: The Classic Chilled Red

If there is one style particularly associated with chilled red wine, it is carbonic maceration.

The technique is famously associated with Gamay and Beaujolais. Instead of crushing the grapes at the beginning of fermentation, intact bunches are placed in a sealed, carbon-dioxide-rich environment. Fermentation begins inside the individual grapes.

The resulting wines tend to emphasize bright fruit and aromatics while extracting relatively little tannin. Depending on the wine, you may find exuberant notes of strawberry, raspberry and cherry alongside the distinctive aromatic character associated with carbonic fermentation.


The important part when it comes to temperature is the structure: juicy fruit, fresh acidity and soft tannin.

Those are exactly the characteristics that respond beautifully to a slight chill.

Not every Beaujolais is fully carbonically macerated—semi-carbonic fermentation and other approaches are also common—and carbonic maceration certainly isn't confined to Beaujolais. Today, winemakers around the world use carbonic and semi-carbonic techniques to produce vivid, fruit-forward reds intended to be enjoyed for their freshness.

Which Red Wines Should You Chill?

Gamay and Beaujolais are the obvious starting points, particularly youthful, fruit-driven bottlings. But they're far from the only choices.

Light Pinot Noir can be excellent served cool, particularly when it hasn't been dominated by new oak. Frappato, Schiava, Zweigelt, País, Poulsard and Trousseau are also natural candidates, as are lighter expressions of Cabernet Franc, Cinsault and Grenache.

Italian reds offer plenty of possibilities, including lighter Valpolicella, Dolcetto and, of course, Lambrusco.

Rather than memorizing grape varieties, though, look at the wine itself.

A red is a good candidate for chilling when it is young, fresh, relatively light in body, high in acidity, fruit-forward and low to moderate in tannin. Wines made with carbonic or semi-carbonic maceration and some whole-cluster fermented reds often fit naturally into that profile.

Conversely, heavily oaked, highly tannic or particularly powerful reds generally benefit from warmer serving temperatures.

The Right Glass for Chilled Reds

Temperature is only one part of presenting these wines at their best. The glass matters, too.

For many light-bodied reds, the Zalto Universal remains an exceptionally versatile choice. But wines made through carbonic maceration, whole-cluster fermentation or other forms of extended maceration present an especially interesting case for the Zalto Balance Glass.

And there is another practical advantage to serving a chilled red in a fine wine glass: the wine won't remain at its starting temperature for long. As it gradually warms in the glass, its aromatic profile changes. Rather than fighting that evolution, taste it.

The first sip at 53°F may be completely different from the last at 60°F.

How Long Should You Chill a Bottle of Red Wine?

You don't need a wine refrigerator or elaborate equipment.

If your bottle has been sitting at normal household room temperature, put it in the refrigerator for about 30 minutes before serving. That's an excellent rule of thumb for a light red you simply want to bring down into a fresher serving range.

For a wine you want distinctly cooler, give it a little longer and check it periodically. The goal isn't refrigerator-cold. A standard refrigerator is generally much colder than the ideal serving temperature for red wine.

If you've gone too far, don't worry. Take the bottle out and leave it on the table for several minutes. Wine warms surprisingly quickly once poured.

Need to cool a bottle faster? An ice bucket filled with both ice and water transfers heat far more efficiently than cold air alone. Check the bottle frequently—you are cooling a red, not icing a Champagne.

And don't forget that the bottle will continue to warm throughout dinner. On a hot day, returning it briefly to an ice bucket or refrigerator between pours can keep the wine where you want it.

Don't Be Afraid to Experiment

Perhaps the best rule for chilled red wine is not to become too attached to rules.

Pour a small taste before chilling the bottle. Put it in the refrigerator for 20 or 30 minutes and taste it again. Notice what happened to the fruit, acidity, alcohol and tannin.

If the wine suddenly seems brighter and more alive, you've learned something about that particular bottle.

If its aromas disappear and the tannins become more pronounced, let it warm up.

Because serving temperature isn't simply a matter of red versus white. It's another way of revealing the structure of a wine.

For the right red, a little chill doesn't hide its character.

It brings its freshness into focus.
